whoo hoo - i finally got on track! the last week or so i have been in a healthy thinking and eating mode. i have been counting everything very well and i feel really great. i have been watching my calories and making healthy choices. i feel like i am in the groove. i still had a few splurges and made a healthy version of zucchini bread. i substituted in some whole wheat flour and rolled oats for some of the white flour. used egg whites instead of whole eggs and applesauce in place of part of the oil. and it turned out awesome! each slice was about 125 calories and i feel like that's a great sweet snack or dessert. i was surprised when my family preferred the healthier version (i made two versions - one did not have the ww flour or oats). they just loved the oats one and i will definitely stick with that recipe. it was fun making something healthy especially since i love to bake.

i haven't planned out specific weight loss goals yet or figured on an exact weigh-in day (maybe monday mornings?) but i can sort that out this week. the most important thing was getting in this right mindset. i was on the verge the last couple months (didnt gain, didnt lose) but now i feel determined to lose and work hard to keep it off. it feels so good. i know i will have hurdles and hard days but as long as i keep it up, i will be set! yay!
