Wisteria - it was Sartori BellaVitano Cheese. This one was 'merlot' I think. This is my favorite of cheeses. It has a sharp flavor. It's a 'hard/dry' type cheese so it grates well (Like Parmesan) then melts into / onto the food really well. Okay, end commercial, haha.

Moo - they should have it. It's not a specialty; I think Walmart carries it too. I got hooked on it at a Whole Foods but am relieved to be able to get it local.

Keyten - that makes sense. I went back & forth on my return this year ... did I want my history from years ago or start fresh? I was glad (and totally freaking amazed) I remembered my password so I brought all the history with me.

It really is that amazing. I let it sit out so it has time to warm up and get extra creamy. I’m going for a walk later and maybe search for the smoked fish you had at world market.

I FINALLY saw it the other day. My car 'now' has a heated steering wheel. In the past that wasn't such a big deal but now, with the weight loss and my being more sensitive to the cold this Winter (well, technically Fall but at 35 degrees in Texas it feels like Winter) ... I'm soooo appreciating that little perk in my vehicle.

Moo - I'm going to have to try to find it IRL - I don't like the idea of it taking 3 weeks to ship via Amazon. I've never been a fan of Brie.. this one may change my mind. And that was smoked trout by Appel (since you're going).

You struggled for a reason... right?? If for nothing more than to be able to reflect on how successful you've been this time around. I was discussing humility vs ego with someone else the other day. I often think I have too much humility because of how many times I've failed. And sometimes I think some people here have too much ego because they never failed. I'm trying to find my balance to forgive the humility but not fake the ego.

I am .. Texas... about an hour outside Dallas. Very cool job. So now I have to wonder.. are these YOUR meals you post or are you snagging shots from the kitchen? Or does your vineyard/wine shop or where ever you are working as a sommelier serve food?

Interesting Keyten the way you break those out as if they are two different people. I'm going to muse on that one for a bit. I have thoughts.. just I need to get dressed & go to the store to pick up some things for the wine sampling.
