I've not yet tried those - just something about low carb noodles strikes me as an oxymoron... can't relax.

Texture is chewy and rubbery. If you’ve had japchae at a Korean restaurant it’s like that.

I just found these available here in Mexico. I have to order them to be shipped but they look like a good substitute for when I make Korean noodle dishes instead of rice or wheat noodles.
