Tested Julian Bakery's Smart Carb #1 bread yesterday at lunch. I have tried their Zero Carb bread previously and found it to not raise my blood sugars at all when I bolused for the protein content. I was really optomistic about the 1 carb version and was hoping it would give me similar results.

I input the carbs and fat for 2 slices of SC #1 into my bolus calculator and came up with a dual wave bolus solution for it. With only 2 carbs for the initial bolus that part was a small amount of insulin. The 24 grams of protein for the 2 slices made for the bulk of the insulin in this bolus. I used 40% of the protein grams to compute the "effective glucose" load of the protein (this is well established to work well for protein load on me). I spread the square wave bolus over 3.5 hours as the calculator prescribed. My BG before eating the SC #1 bread was 94 and stable for several hours prior. At 1 hr and 30 min after injestion my BG was 178. It was still 130 at 4 hrs after eating.

So, I must conclude from this test that, for me, the Julian Bakery Smart Carb #1 bread isn't so "smart." Something isn't copacetic about their labeling. My body makes no insulin, so it is a very good crucible for testing the glucose effect of different foods. I was really hoping this bread would be as advertised because it is much more "breadlike" than the Zero Carb version.

By using my glucose correction factor of 1g glucose = 11 mg/dl blood sugar rise and the max rise to 178 at 1.5 hrpp, I can extrapolate the effective glucose load of the SC #1 bread:

Excess Effective Glucose = (178-94)/11 = 8g or 4g per slice. From the rapid rise that I experienced, I can sumise that these are straight carbs and not from the protein. Therefore, in the future I will bolus for 5 net carbs per slice. It is highly likely that the 12g advertised for protein is over estimated also, so I may have to reduce the square bolus as I increase the instant bolus.

5 grams of carbs per slice still isn't too bad though. Not really an option for Induction phase unless limited to a single slice after the initial 2 weeks ketosis start. Prolly worth trying during OWL if you're not adversely effected by the grains.
