Unexplained high blood sugars many hours after a meal? Here's a technique that is working for me:

Skipping meals will impact insulin dependant Types I or II diabetics by raising the blood sugar levels even when they are already high. This looks a lot like delayed stomach emptying or Dawn Phenomenon when it happens during the night 5-6 hours after the evening meal. This is caused by the liver dumping glucose into the bloodstream in the response to what it thinks is starvation. It's not its fault; it's just trying to protect the brain and the diabetic pancreas can't respond to cover the rise.

To mitigate or eliminate the effect, eat a small snack of something with low carbs, high fat, and low-moderate protein just before bed (ie: 200g cream cheese, 2 hard boiled eggs, 1-2 oz dry salami, nuts and cheese (1 oz ea), berries and cheese (1 oz ea). This technique can also be used anytime it’s been more than 6 hours since your last meal.

If blood sugars are normal at the time of the snack, bolus for the carbs in the snack. If BGs are high, correct with an appropriate bolus counting the carbs of the snack in the bolus. If BGs are low, adjust the amount of carbs in the snack to correct the low and DO NOT bolus.
