i recently found a facebook page called “trader joes meals for busy moms” and even though i’m not a mom... wow has this page reignited my food lovin side!! back to my super fun and super satisfying meals now!!

me: gosh i have NO food in this apartment
also me: i’ll make scrambled “eggs” (tofu) with tomato and vegan cheese, potatoes with onion and jalapeño, grapes, and sugar free cinnamon vanilla iced coffee :) ~550 calories total

Took a hard look at my last few months of calories in vs calories out and realized I've slowly and unintentionally been upping my intake, while also increasing my workouts. There have been many days (and weeks) where I've gone wayyyyy past my RDI (was 1600) but even on the days i was good i wasn't able to keep it under 1600. Yet i managed to maintain/lose.
I recalculated my RDI for very slow weight loss, at my current weight and activity level and realized my RDI is actually back up to 1800. I typically ate this much in a day anyways, because I recognized that's how much I needed to fuel myself... but it feels better knowing I wasn't making up an excuse in my head to eat more! Looking forward to more days ahead without seeing "110% over your RDI" at the bottom of my screen!!!
Funny enough 1800 is what I first started with back in Spring of 2019 to lose my initial 20 pounds, then dipped down to 1600 to get another 20 off.

Woohoooo. 2 month weigh in. Still inching down. May be a new low?!?!?
These last 10 pounds have been the hardest to get rid of, it's been about a year around the same weight, but i DID lose another dress size in that year. NSV for me getting into single digit #s aka a size 8!!
I have a mini goal to hit 140 by 4th of July weekend. My work's gym just lifted the mask rules so I'm gonna attempt to get back to my 3 hours a week there (paid!!!). Happened at the right time since its too hot around here to run any time soon. Hoping that the gym plus my 2 boxing classes a week could get those last 4 pounds gone. But ya know it's all about that food intake 😉💪
