Todays lunch... 2 handfuls of coleslaw mix stir fried with onions, a drop of Sesame Oil and one slice of leftover pork tenderloin.

I seem to have an issue reaching my 1500 calories a day no matter how hard I try. I eat smaller healthy meals with snacks mid-morning and afternoon. Today was a total cheat day and I still fell short by 500 calories.
Does anyone have helpful suggestions?
