Saw my doctor for my annual yesterday, and she is beyond thrilled with my labs -- LDL of 78, HDL of 60, kidney function (questionable at times) well in range. This even after my weight rebounded slightly. I credit the plants.

Have loosened up slightly with a little dairy and egg here and there, and even a small portion of fish yesterday, but still primarily plant-based. This morning, I had avocado toast with miso and sesame seeds, tofu oven-roasted with a bit of EVOO and seasoning, and dried apricots. Have slipped into some less healthy habits (oh, vegan cheese, you temptress!), but getting back on track
