I've never cooked acorn squash. I need to learn. Can this old dog learn new tricks? How did I miss this? I love all summer squashes and yams. But the peelings are easy. I think that was always my problem. Ocassionally they made it into my house but never to the table. Eventually they went to compost. Your comment of support warmed my heart. Thank you.

Thank you, lindar! 🤗 snowwhite, it's the easiest thing. I just cut my squash in half, I don't peel it at all. Put it cut side up in a covered roaster with a little chicken broth or water in the bottom. Salt, pepper, drizzle of honey. Bake. Much easier than wrestling those peels 🙂
