Make some spaghetti with the pork if there is left overs the sauce will elp the meat get nice n soft again.

Looks yummy! I was also going to suggest putting chicken stock over meat and cook it in crockpot on low for 3-4 hours. It will rehydrate it. You can also do it on stove.
