Cheesegobbler - what are you meal prepping today? I also did egg & ham muffins for next week. Roast beef and carrots in for supper so now I can spend the rest of the day watching football.

I did mine yesterday. Prepped veggies for snacks, made a chicken and vegetable medley and portioned it out. I'm making a pork tenderloin tonight so I may make leftover veggie and pork casserole. Your meals sound wonderful!

Diana - I almost did a pork tenderloin today too! It is a lot of work prepping everything but so worth it once the week starts. Keeps me on track better. What veggies do you put in your pork casserole - I have never done that with my leftovers but need new ideas!

I usually use whatever veggies I have on hand. Always have broccoli.. I sometimes use Asian medley vegetables but I usually use those with my chicken breasts. I am making scallop potatoes tonight as they are making moms favorites. She is going back to my sister's in Calif tomorrow so I'm making her a good meal tonight. I'm also roasting some broccoli, that's what I'll eat...no potatoes for me.lol

Diana- sweet that you are cooking your mom's favorite and that you are being good and having roasted broccoli which is one of my favorites and then I add a little grated fresh parmesan at the end. Glad she got to visit you. My mom is 79 and in Arizona so I don't get to see her very often.

I am answering your question about my heart issues on your post..I have a pacemaker. I had a heart beat of 28 bpm when I finally went to hospital. The type of pacemaker I got was the kind they put in much older people.(80+) I was in my 50s at the time. They think I had a birth defect but they aren't sure . There isn't any data on the effects of exercise so my doctor just says to listen to my body. I also have a problem with my enjection fraction.It has to do with blood going in and blood going out of heart and into body. Mine isn't going out fast enough. There is no treatment except for eventually getting a heart transplant. Luckily I'm not at that point yet! The cardiologist actually thinks my fitness and eating plan helps me so I stick with it. I didn't know you had heart issues. I hope it's under control!💜💜

That’s what I did today as well. Feels good to have prepared meals for a few days. I’m way too tired from teaching to cook every day.

Diana - Wow good for you to be healthy and doing what you can. My grandmother had a pace maker put in when she was in her 60's and she lived to be 96. She had an irregular heart beat. I have never heard of enjection fraction but glad that you are aware and have everything monitored. I found out about my heart condition during cancer treatments. The surgeon explained it to me that many people can have it and not even be aware of it. Since I know they just keep a measurement and if it enlarges to much I would have to have surgery. Well we both have good why's as to our diligence with our health!

StormsGirl - I agree with you 100% It is nice to have things done so that when I get home it is easy. Otherwise I may make bad choices.

OTB - It is funny in the winter I prep different than the summer. I love being outside so Sunday nights my hubby usually grills up a whole grill of protein and then I just add veggies for the week. In the winter I do more casseroles, soups and items I cook.
