I've been meal prepping today. Started out the week deciding to try keto for the first time. Its a huge contradiction to me. Years ago I was 80/10/10 vegan (80% carb & 10/10 prot/fat) so switching to a meat and fat heavy, low carb life is hard to grasp. But, I'm managing to find that its mostly veggie based fats, coconut cream, avocado oils, things like that, so I'm accepting it a good deal more now that I've jumped into the meal prep stage. Today I made lime fajita chicken with cauli rice and fajita style veggies with 1/2 avocado for lunches. For breakfast I have 4 strips turkey bacon, 1 egg + 2 yolk, and 1oz seeds/nuts and 3T keto oil for coffee. I managed to make 5 breakfast boxes and 6 lunch boxes. I only work in the office 3 days a week, so that will get me thru 2 weeks at the office, and I can cook at home the other days. I'm starting Friday, I still have a watermelon to finish off tomorrow, other than that the fridge and cabinets have been purged of non-keto items.
