Spinach and mushroom omelette. I added an extra egg as should have been giving blood this afternoon, but it has been postponed to tomorrow so 🤷♀️

That looks really good. Noticed the seven day guide in the Slimming World magazine for this month starts with a spinach omelette. Looks much better having mushrooms. Think it would be nice with potato and onion too, but suppose that would push the calories up

Judy the mushrooms give it a lot of heft, and barely add anything calorie wise. They are best dry-fried anyway so for me a no-brainer. I put a bit of sriracha on for a flavour kick. Chives would be good too. 👍
