Thrown together salad for lunch. Been a while. Not as delicious looking as some on here, but it was tasty.

Thanks everyone! This is baby spinach, chickpeas, sweetcorn, tomato, sweet chilli sauce and some reduced fat garlic & herb soft cheese from Aldi. Didn't have cucumber and actually forgot I have olives and beetroot in the fridge, but maybe next time. Probably could do with some more protein too.

Looks amazing. Have you tried Tempeh? It's the bomb, marinaded, cut in to strips and whacked into the air fryer. Can use in salads, curries, sarmies etc In terms of protein, it packs a punch 👊 👊 👊
