Cauliflower Fried Rice

In large sautee pan on med heat

1-2 Tbsp EVOO (extra virgen olive oil) wait until heated before adding next ingredients

1/2 minced onion
2-3 cloves of minced garlic

sautee a couples mintues - don't let the garlic get brown/burnt

add 2-3 cups grated cauliflower (about 1/2 head & must be fresh. frozen won't work in this recipe. You can use a box grater or a food processor.

Cook 5-6 minutes

Move "rice" to one side of pan.

Crack & Scramble 2 large eggs in the empty side of pan.

While eggs are cooking through, add 2 tbsp soy sauce to "rice"

Once eggs are done, combine all ingredients. Let cook for 1-2 mintues more or until the "rice" is al dente.

Taste & Tweek seasonings as desired.

Sprinkle fresh slices of green onions on top before serving.

Makes 2-3 servings.

***This recipe really lends itself to variations and additions. I like to add 1/2 grated carrot and a palm-full of peas. Just think of what is in your local chinese restaurant's fried rice.

diced zucchini is an excellent low carb option.
