I just made a flax meal bread. I will follow that up with beef/vegetable stir fry and a pot of cream of cauliflower soup. That should stand me in good stead for the next few days so that I can focus on my exercise and decluttering for the new year.

Hi Knslovinggod: I actually use a very simple low carb recipe. I melt salted butter in a large pot (abt 2 1/2 T), add 1/2 onion and clove of garlic finely chopped. Saute in butter until onion is transparent. add chicken broth and about 2 cups of water. chop a head of cauliflower into small florets and add it to the liquid. allow it to cook until the cauliflower is very soft. remove the pot from the stove. use a hand held blender to puree the cauliflower in the pot until it is velvety smooth (it's still very hot at this point and it will look very creamy). Add about 250g (8 ounces)of heavy cream and mix it in with a spoon. voila! It is so creamy and yummy.
