3.4 miles walked today, 3.8 miles yesterday.

Yesterday, I finally made that Baby Corn Bread recipe I've been meaning to try since Thanksgiving. Really pretty good with a definite corn texture. It's nicely sweet, but could be made less so with less sweetener. And it's really quite moist but could be made less so with more cooking time, although I had already increased the time 10-13 minutes more than the recipe called for. This recipe is not on the FS site but is on that Maria's health consulting site...mariahealth dot blogspot dot com. You can also just google baby corn bread and it should come up for anyone who's interested. It's a very nice addition to the meal when I'm having pumpkin chili.

Just some FYIs on the recipe...she has 2 recipes for this bread, 1 for a food processor and 1 without. I made up the one that DID NOT use a food processor. If I had cut it into the 12 servings she suggests, I would have had slightly different calorie and carb counts than she indicates. She indicates 121 calories, 2.75 carbs and 1.1 fiber. I'm assuming that was total carbs, so net carbs would have been 1.65. My batch would have yielded 154.8 calories and 1.98 net carbs. Perhaps it's because I used the butter option in the recipe rather than coconut oil? I don't know. In any event, the numbers I logged in my diary are different from any of the above because I cut it all into 8 servings rather than 12.

I've been meaning to try this recipe too, but have not found the time to do so yet. I sure hope after all the holidays are over, I can really buckle down and do more cooking for myself. Talk soon.:) I see your down another pound. Nice job. keep it going.:)

Thanks Laurie. This loss was just me getting back to where I was prior to my pre-planned pizza indiscretion. It's great to get back to this weight, but I have to be aware, for the future, that even 1 day moderately off plan took me nearly a full week to recover from! I don't feel too bad, as it was my first off-plan eating in 9 months and it had been planned for almost 3 months. But gotta keep that nearly week-long recovery in mind if I'm ever tempted to go off plan without prior planning!
