New breakfast today! Have been waiting for the right time to try Maple Grove Farms of Vermont's Sugar Free Pancake & Waffle Mix and Mrs. Butterworth's Sugar Free Syrup. Loved them both and would definitely have again.

I compared the mix to the Cheesecake Pancake recipe on this site and discovered the calories were higher with the Cheesecake Pancake recipe and the net carbs were about the same, so I went with the easier-to-prepare mix. I added a bit more water to the mix and I also added 2 packets of Truvia (may not have been necessary). One thing about the mix...the Nutrition Facts only give you the info for the mix and not for the mix "as prepared." So you just have to remember to add the egg(s) and the oil into one's diary.

Another very cold morning here, with temps still just below freezing at 9AM. I did not walk yesterday (belated day off) but will be back at it as soon as it warms up a bit. By Thursday, however, we might hit 70 degrees, so this cold snap is just a couple days' blip for us. I can't imagine how everyone is handling the blizzard that went up the East Coast.

With all the cold weather yesterday, I spent the afternoon cooking up some Atkins-friendly food. I now have 2 crustless spinach pies in the 'frig. I had some for lunch yesterday as they came out of the oven and they are so-o-o good; probably among the best Atkins foods I eat. And then I made up another batch of the Pumpkin Chili. It's a great recipe too, but I wish I had a "kitchen prep staff" that would do all the slicing and dicing for me!!! I considered making up some Baby Corn Bread too, but I was about kitchened-out. Maybe later today??? It COULD be good to go with that chili.....

Boy Sandy, those pancakes sound so good right now. Maybe we will have that for supper.lol I don't think the men(meat and potato eaters)would appreciate it though.lol
