Totally enjoyed it NN. Might have been most temder pork loin roast ever as it was brined for 24 hours in the whey leftover from making ricotta last week. Whey plus salt, garlic powder works great! And this wine also had apricot & pineapple notes. It the same riesling as the last one just a different vintage.🍷

Oh, fantastic! I didn’t know you are able to brine meat in whey. Impressive! I always brine my turkey in apple or pineapple juice for Thanksgiving, but that’s the extent of my brining knowledge. I love a good dry resiling and I bet that went perfectly with your fall-inspired dish.

oh yes, that looks good! I'm going to have to break out some pork loin now. yum. mine won't be near as pretty though.

I'm sure it'll taste great Kat! And NN, I've brined pork & chicken breast with whey with great success. I've also used apple juice & cider on both. I also like pureed onion, yoghurt, acid (lemon juice, any vinegar) for any meat. Be careful with long pineapple juice brine on pork, enzymes can make it mushy
