My take on bahn mi. Pan seared bbq tofu slices, lettuce, home made quick pickled veggies (radish, carrot, onion), and a home made spicy mayo. WOW, it's gonna become a new regular dinner for sure. Side salad with my home made Greek yogurt+avocado dressing.

JoeyMor - extra firm tofu, slice and press between paper towels to get rid of excess water. Seasoned with garlic, salt, pepper, oregano. Pan seared in a little spray olive oil, then finished with some bbq sauce once it's browned and a crispy. It's honestly amazing how the pickled veggies really round out the sandwich, too. "Pickled" them in 1 part rice vinegar and 2 parts water and a small amount of sugar and salt overnight.. so so good together.

Thanks for sharing the recipe! I went vegetarian for a week once 😂. This reminds me of a tofu sandwich Blue Apron recipe I came across. The pickled veggies definitely took in to another level. My first thought was "going vegetarian wouldn't be so bad". But - going out to eat and eating other's house was too difficult. How did you make your mayo and dressing?

AboutMyTribe - Well, in a perfect world it would've been sriracha mayo, but I didn't have sriracha, so it's lite mayo, jalapeno hot sauce, and a tiny bit of ketchup for color lol
