Raspberry Cheesecake Squares

These low carb cheesecake squares are very good.

Ingredients

Directions

  1. Sprinkle gelatin into boiling water.
  2. Stir until well dissolved.
  3. In bowl, beat cream cheese until very creamy.
  4. With mixer running, add geltin,1/4 cup at a time.
  5. Mix until thoroughly combined.
  6. Pour into 8x8" pan, refrigerate until firm, about 2 hours.
  7. Cut into squares and serve.

I liked it a lot but my family didn't. I'm glad they don't....more for me.

My husband and I loved this. I changed it a bit. I made a low carb pie crust with almond meal. I made it with a strawberry sugar free jello mix and then added real strawberries in the mixture. It was very yummy!

We added 2 packets of sweetener to the cream cheese and what a great taste! Not quite so tart.

I made these today and it doesn't seem quite right - too much like gelatin. I'm wondering if the amount of cream cheese listed is incorrect. I looked it up online and it called for (2) 8 oz packages of cream cheese. Not 2 3/4 small 3 oz packages. Did I miss something in the translation? Sry if I did.

I think I will try it with more cream cheese next time, the flavor was just a bit too strong for my taste. Also sounds like it would be great with some whipped topping. Definitely a thumbs up from me.
