Your poached egg looks perfect! I recently tried a micro-wave method I saw on the internet, but disappointment. I love poached eggs, but can't make nice ones. I even like the slight vinegar taste of poached eggs, when I cook them in a small dish to resemble true poached eggs, I add a little vinegar. (Mind you, I also like pickled eggs, lol) I heard a Chilean woman explain that an avocado toast with an egg on top was a very common snack in Chile. I think hers had hot sauce added, because she put hot sauce on everything.

I do my poached eggs the old fashioned way.... about 5 cups boiling water and just a pinch of salt. Crack the cold egg into a bowl and gently roll into the boiling water... you loose about 1/3 of the egg this way but it comes out great every time. I just then count it as 1 medium whole egg in my food diary. As for the avocado toast (avocado in any form is a winner for me). But for this in particular, I add a dash of cayenne pepper and about 1/2tsp lemon juice. I like pickled eggs too lol, they were a childhood treat back in the day :)
