I screwed the pooch this time. Hubby loves lemon...I am not a fan. So being his favorite wife, I planned a little treat. I made Lemon curd. I tasted it ..... LO AND BEHOLD IT WAS THE SINGLE MOST AMAZING THING I HAVE EVER EATEN. (Besides chicken and dumplings). I had to toss the bowl in the soapy sink water.....the temptation!. As it was I'm sure I licked a layer of silicone off the spatula. Then Daughter#1 tells me the keto version is awesome too....I feel kinda dense....why dinna I think of that? I did Keto it up a bit I pit 1\2 cup in 2 cups of heavy whipped cream...it's not quite as WOW!!! but I think we might be able to eat a little here and there without hitting a sugar coma.
