Looks great. I've never tried Tofu. Does it actually taste like eggs when done that way? Gotta love pico de gallo!!

Cory, it's delicious! It's similar, but different from scrambled eggs. The texture is more crumbly and you definitely need the nutritional yeast (or cheese) to give it that umami flavor because tofu is very plain on its own. I actually prefer it over scrambled eggs even though I'm not vegan - it keeps better in the fridge, too.

I tried a tofu scramble this morning and you're right - it's delicious!
I did similar to you with pico de gallo, S&P, cayenne and cheese. I'll have that for breakfast any day! A little more expensive per serving than eggs but a nice alternative. I may branch out and try more tofu dishes.
I appreciate your pics. They give me good ideas. I should start adding mine.
