Veggie Quiche Muffins

A yummy, low carb, breakfast on the go muffin that kids love it too.

Ingredients

Directions

  1. Preheat oven 190 °C. Oil a 12 cup muffin tin.
  2. Heat 1/2 the oil and sauté onion for 5 minutes. Add garlic and cook 1 minute. Add remaining oil and sauté greens until wilted, about 7 minutes. Season with salt and pepper.
  3. Whisk eggs, grated cheese, and herbs. Stir into veggie mixture.
  4. Pour mixture into muffin tin. Bake for approximately 15 minutes.
  5. Note: change the herb combination or the type of cheese for a different taste.
