Protein-packed raspberry cocoa muffins with oats.
Ingredients
Directions
- Combine all wet ingredients in a bowl: eggs, cottage cheese, apple sauce, raspberries and vanilla extract.
- Put oats in a food processor to turn to flour-like consistency.
- Combine all dry ingredients in a bowl: oat "flour", cocoa powder and protein powder.
- Mix the dry ingredients into the wet ingredients until well mixed.
- Grease 12 muffin tins with the coconut oil. Fill each tin to the rim with the mix and bake at 175 °C for 30 minutes or until done (skewer comes out clean when you poke the centre of the muffin).
