Protein Muffins

Protein-packed raspberry cocoa muffins with oats.

Ingredients

Directions

  1. Combine all wet ingredients in a bowl: eggs, cottage cheese, apple sauce, raspberries and vanilla extract.
  2. Put oats in a food processor to turn to flour-like consistency.
  3. Combine all dry ingredients in a bowl: oat "flour", cocoa powder and protein powder.
  4. Mix the dry ingredients into the wet ingredients until well mixed.
  5. Grease 12 muffin tins with the coconut oil. Fill each tin to the rim with the mix and bake at 175 °C for 30 minutes or until done (skewer comes out clean when you poke the centre of the muffin).
