Banana Biscotti

Crunchy twice baked banana cookies.

Ingredients

Directions

  1. Mix all ingredients except chocolate chips (add flour as needed).
  2. Roll into 2 8" logs. Bake for 23 minutes in preheated oven at 175 °C. Remove from oven and allow to cool for 10 minutes. Lower oven temperature to 105 °C.
  3. Cut into 1/2" slices, lay out flat on cookie sheet, bake for 15 minutes. Flip cookies and bake for an additional 15 minutes. Cool on wire rack. Biscotti will harden as it cools.
  4. After cooled melt chocolate chips and then dunk cookies to have half covered. Place on parchment covered cookie sheet and place in the fridge to cool until chocolate sets.
