Microwave Lemon Curd

Healthy, low calorie dessert.

Ingredients

Directions

  1. Melt butter. In another microwave safe bowl, whisk together the sugar & eggs until smooth.
  2. Stir in lemon juice, lemon zest & melted butter.
  3. Cook in microwave for 1 minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon.
  4. Remove from microwave, pour into small sterile jars. Stores for up to 3 weeks in refrigerator.
