Directions
- Using a dutch oven or saucepan with lid, preheat oil and cook onions until translucent.
- While onions are cooking, chop and add peppers and garlic. Add these to pan.
- Chop tomatoes and tomatillos in large chunks and add to pan. Simmer all together until juices come out and it becomes soupy. Add tomato paste.
- Spice as desired.
- Add fish fillets. Put the lid on and simmer until fish is tender and completely opaque.
