Baked Oatmeal Cupcakes

Soft oatmeal cups for breakfast on the go.

Ingredients

Directions

  1. Preheat oven to 375 °F (230 °C). Prepare muffin tins with liners or non-stick spray.
  2. Combine dry ingredients in one bowl and wet ingredients in a second bowl.
  3. Add wet ingredients to dry ingredients and stir to combine.
  4. Spoon batter into 32 muffin tins and cook for 25 minutes. Cool on wire rack.
  5. Note: can be frozen.

Made these exactly to the recipe as written except I left out the chocolate chips and added a tablespoon of low calorie brown sugar. As Yves336 noted, they came out very moist and dense. My mother makes Apple butter with low calorie sweetener and I topped them with that. A nice snack without too many calories. Thank you for this recipe. I will make these again.

Good flavor. Not too sweet. I left out the chocolate chips. Very moist and dense. May add 1/2t to 1 tsp of cinnamon next time.

If you leave out the water and spread them out thin, not more than an inch thick, you,ll end up with a breakfast bar.
