Oatmeal Muffins

Taste like regular muffins and are yummy.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Spray muffin pan with non stick spray or line with cupcake liners.
  3. Mix oatmeal, salt, baking powder, cinnamon.
  4. Add remaining ingredients until it resembles slightly runny oatmeal.
  5. Fill muffin cups 3/4 full.
  6. Bake 15-20 minutes until golden brown.

I absolutely "LOVE" these muffins!!! I like them a little more dense, so I use old fashioned oats and put in an extra 1/4 cup of oats, I use half the cinnamon, and 2 tsp vanilla, I also peel and core 1 honey crisp apple, cut it into small pieces and add to the mixture just before putting into the muffin cups. Altering the recipe, requires me to cook the muffins 35 minutes, rotating the pans half way through. Keep in mind that I am cooking in a small rv oven, so I am not sure what the cook time would be in a full size oven.

These muffins are very easy to make and taste awesome!! I love these and my kids are crazy for them. They are perfect for breakfast or mid day snack.

I was very disappointed in this recipe, but my muffins did not look anything like those in the picture. Did you use regular oatmeal or quick oats? I used regular oatmeal and the muffins did not rise. They also had very little flavor.

Is there a substitute for the 3/4 cup skim milk? I am lactose intolerant :( Could I just replace it with water? This recipe looks amazing however :D

I've been substituting one packet of flavored oatmeal for half a cup of the plain oatmeal. I think it gives it a little something extra! ;) Great recipe!

I need these when I'm detoxing. Try using a Stevia product instead of Splenda. Much better for you. And throw in some blueberries to make them extra busy
