It is possible I should cut back a bit on the most awesome healthy meatloaf ever. Increased bike, weights on the 11th. HEY, maybe it's um, muscle gain...

I vote muscle too! My husband is totally not a cook and one day he grabbed what he thought was hamburger to make meatloaf. It was a split-into-baggie of hamburger and a split-into-baggie of my homemade Italian sausage. WOW when I got home I could not believe how good it was. He's taking over the kitchen on meatloaf, enchiladas, the BBQ on making the best ever chicken breasts -- he'd go for ribs or dark meat, but... wow! Include breakfast and more. Yay! I trained him well. I am so so sorry, but the leftovers belong to me ;)

Here's the recipe still waiting for moderation. The calorie count was off so it's not over 500 cals. Yields: 12 servings Prep Time: 15 mins Cook Time: 1 hr 20 mins Meal Type: Main Dishes Rating: by claireosullivan Meatloaf Hard to keep to one serving! but great. Ingredients 2 oz ground beef (95% lean / 5% fat) 1 serving honeysuckle white 99% fat free extra lean ground turkey breast 1/2 serving shoprite meatloaf mix 1 serving organic valley organic egg whites 1/2 cup milk (1% lowfat with added vitamin a) 4 servings sara lee 45 calories & delightful 100% whole wheat bread Directions NOT 593! 248 calories!! Very frustrating going through the ingredients, they are not reported correctly... 4 oz is just so wrong... but that's about the serving size. (I used plain ground turkey breast which is about right) Take 1 lb of thawed italian sausage, 1 pound lean ground beef put in bowl. Mix in chopped onion, green pepper, 1/2 package of meatloaf mix, 1 egg, 1/2 cup 1% milk, 1 cup fine bread crumbs. Mix. It will feel wet. Turn into meatloaf pan (spray with PAM first!) and bake at 375 degrees uncovered 50 minutes covered, last fifteen uncovered. Remove, let sit a few minutes, but it will continue to cook. I remove at 140 degrees and let it continue to heat throughout until 150 degrees. For spicy Italian sausage in this, add flakes of red pepper. *Use my Italian sausage recipe.

Yields: 8 servings Prep Time: 5 mins Cook Time: 5 mins Meal Type: Main Dishes Rating: not yet rated. fatsecret members overall average rating by claireosullivan Healthy Italian Sausage (To Love) This is a recipe for homemade sausage (not in casings, who has that kinda time?) Ingredients 1 serving honest turkey ground turkey breast 3 tsps minced garlic 1 oz fennel bulk 2 servings spice classics paprika 1 tbsp ground basil (dried) 5 tsps leaves oregano Directions Put 1 pound ground breast of turkey into a bowl. Add all ingredients squish like you would a meatloaf with fingers; for 2 people, put 1/4 of the pound each in different freezer baggies, freeze, and use what you want for dinner. I like in spaghetti, lasagna, pizza, and some in meatloaf.
