looks like comfort food. Vegetable Soup is not so bad on the carbs depending upon how it is made. I make my own beef or chicken stock with either soup bones (preferably grass fat beef) or free range chicken. Put in large soup pot with water, 5 bay leaves, thyme or marjoram, coarse ground black pepper and salt to taste. I Add celery tops or the root base of the celery, medium onion quartered and about 5 long carrots cut in half. Simmer for at least 2 hours or cook in crock pot over night. Stain off the vegetables, bones or chicken frame. Stewed meat on the chicken can be used for another dish. Add 24 oz can of diced tomatoes and 24 oz can of tomato sauce and 2 -12 oz packages of frozen mixed vegetables without potatoes. Summer for about 1 hour. Serves family of six with leftovers for later. You'll find the carbs low and the soup satisfying.
