Mini Broccoli Crustless Quiche
Mini broccoli, tomato, and mozzarella quiche.
Ingredients
Directions
- Preheat the oven at 175 °C.
- Rinse and dry the broccoli. Cut the broccoli into bite size pieces. Dice tomato into small pieces.
- Mix eggs, broccoli, tomato, and the mozzarella. Add salt and pepper to taste.
- Transfer mixture to a greased (with oil) muffin tray.
- Bake for 20-25 minutes until egg hardens. Remove from oven but let it set for a few minutes before removing from tray.
- Enjoy.
